The school year is already in full swing and most of us are up to our ears in soccer practices, scouting activities, school projects and more. So, it’s easy for one of the most important meals of the day to go by the wayside – dinner.  But food doesn’t need to be fancy to taste good, be nutritious, or give us the fuel to power through the week.  Zoës Kitchen reminds us it’s the ingredients that count and the love that goes into the preparation. Their restaurants are dedicated to healthy eats (take out and dine in) that are satisfying and wholesome with the freshest ingredients.

Here is a recipe for Fresh Take Pasta Bake, to give moms so inspiration for mealtime.

Ingredients:

2 tubs Zoës Pasta Salad

Rotisserie chicken (pull meat into bite-sized pieces and discard skin)

2 cups marinara (or your favorite pasta sauce)

1 cup shredded low-fat mozzarella

Freshly sliced low-fat mozzarella cheese

2 freshly sliced tomatoes, in ½ inch pieces

Directions:

Preheat oven to 350 degrees. Grease 9×9 inch casserole dish.

Combine first four ingredients in mixing bowl.

Transfer to casserole dish. Alternate rows of mozzarella and sliced tomatoes across the top of the casserole.

Bake for 30 or 40 minutes until heated through.
