Trying to cool off seems like a never ending effort, but we have a little something in mind to bring on a much needed chill. We’ve whipped up a quick and easy way to keep our temps down. (And its even better than those day dreams we keep having that involve flying to the South Pole with a Pumpkin Spice Latte in hand and Christmas music playing on repeat.) Whether you are parched poolside, or baking at the BBQ, this Watermelon Coconut Cocktail is the perfect way to get refreshed – in more ways than one!
Watermelon Coconut Cocktail Recipe
Serves: 6-8
Prep Time: 5 mins
Ingredients:
- 6 cups of watermelon, cubed
- 2 cups of ice
- 2 cups of coconut water
- 1 cup of coconut rum
- 1 cup of Sprite
- 1/3 cup of lime juice
- Optional for garnish: shredded coconut & sliced watermelon wedges
Instructions:
- Place watermelon and ice into blender. Blend until semi-smooth.
- Add coconut water, Sprite, rum, and lime juice. Blend until smooth.
- Serve and enjoy!
Chill without the extra thrill
While we’ve made this thirst quenching watermelon coconut drink into a cocktail, it has a quick and easy alcohol-free alteration. Because when it comes to battle of good time vs. heat stroke, you want all your guests covered. Simply remove the rum from your mixture before blending and you are all set on the road to chill city.
